Renowned for its love of wild British ingredients and sustainable approach to dining, The Forge is a 70-seater restaurant based in Hotel Indigo Chester. The exemplary eatery took two AA Rosettes home last year for “Culinary Excellence” and this year welcomed back its Head Chef, Dan Regan.
Now The Forge has announced it is launching a brand-new menu for the summer in collaboration with Aubrey Allen. The three-generation-old family-run enterprise is a select supplier for the Royal Household and will equip the Chester restaurant with naturally produced and ethically sourced meats. These include grass-fed ribeye, fillet, bavette, picanha, rump cap and fillet steaks, along with heritage sirloin and Cumbrian chickens.
The recently appointed General Manager for Hotel Indigo Chester, Scott Rankin, commented:
